With a background working in some of the UK’s best kitchens, as well as the food manufacturing business, Lewis is a student of the culinary world, twinning a keen eye for detail with a healthy interest in the science of taste and flavour.

Favourite food: Anything cooked in butter.

Greatest achievement: Graduating the Royal Academy of Culinary Arts’ Specialised Chef Scholarship with a full distinction.

The most unusual item in your desk drawer: Fish tweezers.

Biggest inspiration:  My College lecturer. He was tougher and more disciplined than the average army officer, but an amazingly natural chef.
