Creating a new grab-and-go restaurant concept.
The Brief
Taking the hero flavours and dishes of the core Pizza Express brand, we worked with Pizza Express to create a new grab-and-go concept with a strong focus on the breakfast and lunch markets.
Working alongside key Pizza Express stakeholders, we handled the whole innovation process including ideation and opportunity mapping, culinary development, supply chain creation, ingredient sourcing, operational kitchen design and stress-testing. Among the key challenges were developing a range true to the eating experiences and flavours of great pizza but with nutritional values more appropriately aligned with the lunch market. Hero products included pizza wraps, luna flatbreads and piadinas.
