Vegetable Ice Cream Case Study

Creating a range of family-friendly, premium ice creams containing hidden vegetables.

The Brief

We were briefed to create a range of family-friendly, premium ice creams containing hidden vegetables. Flavour was to be the champion whilst the vegetables were to be undetectable.

We created a range of ice cream prototypes, exploring various fat:sugar:liquid ratios in order to achieve the perfect texture and flavour. Different vegetables were trialled in order to achieve maximum flavour without vegetable undertones. The final range included a strawberry and carrot, vanilla and parsnip and a chocolate and beetroot ice cream.
